  1. Place the Onion, Garlic and Oregano into a medium pan and sweat over a moderate heat for 5 minutes or so until softened.
  2. Pierce the whole Chilli a few times, add to the pan and cook for a few minutes more.
  3. Add the tinned tomatoes and season with Salt & Pepper. Bring to a simmer and cook for 30-40 minutes until thickened and reduced slightly.
  4. Taste for seasoning and add 1 tsp Red Wine Vinegar. Taste again and add more vinegar if neccessary to balance the sauce.
  5. Remove the Chilli and chop finely. Add the Chilli back to the sauce a little at a time, tasting as you go until the desired heat is obtained.
  6. Serve immediately, store in the fridge for up to 7 days or freeze in portions for up to 2 months.
